A New Delicious Decadent Good for You Breakfast
(or Lunch or Dinner!!)
Here I go - again! Bragging and showing off my breakfast.. and I'm not gonna stop! (FYI: I eat my breakfast late, hours after I wake up)
This one happened by accident! We all know some of the greatest discoveries were indeed found that way!
How to sum this up nice and neat and get to the good stuff? My living room carpet. I set out to toss it and have my floor underneath sanded, stained and varnished. Yesterday was the day.
Wanting to spend as little time downstairs and get stuff done ahead of time - bright and early I pan sauteed a LOT of veggies.
- Green cabbage 3/4 of a head sliced, maybe more (I finished up one, started another)
- 1 1/2 onions
- 2 stalks of celery
- 4 sliced carrots.
- Feel free to use sliced peppers, mushrooms, bean sprouts, or _____.
Used a bit of oil and yes it takes longer to soften, oh well. Got it all nicely browned and just delish looking. Placed it into 2, quart containers. The plan? Dinner time, I was going to take out those stored veggies, heat em' up, make a well in the center and brown some ground turkey. Add in my spices. Viola' great dinner for me and the hubster. Failing to plan is planning to fail!
But nooooo.. the house really reeked (ugh they are here now applying the second coat).. hubby comes home, he says let's go out to eat. Sooo, we did.
Come this morning, when my first client of the day is 8am and my last ones' are about 9:45 PM and my house is upside down inside out (remember my floors are being redone), oh yeah, I'm a-gonna use those leftovers. For breakfast!! For breakfast!!! Hence my new breakfast discovered by accident.
Got a one-quart container from the fridge, heated it in a pan.. pushed veggies to the side, made a well in the middle, spritzed on some cooking spray and placed four jumbo egg whites in the center.. used a spoon to scramble them as they cooked.
When they were cooked through I combined it with the veggies and added lots of:
- powdered ginger
- garlic powder
- black pepper
- a little salt
- about 1 tbsp soy sauce
- Tofu, cubed (Unreal low-calorie protein, it's time to try it if you haven't)
- Chicken or Turkey Cutlet strips
- Fresh Seared Tuna
- Grilled or Baked Salmon
- Ground Turkey or Chicken; I personally prefer the texture of the turkey
- And of course I don't eat beef often but that too
