Turn it up!!! Yup, I'm on a MAJOR turnip kick!
 And so should you be!
Here I used my crinkle cutter (LOVE that thing!) and roasted em'.

Meet the least well-known veggie of the cruciferous family – the turnip. Akin to broccoli, brussels sprouts, arugula, and kale, turnips are nutrient-rich and low in calories. They are about 1/3 the calories of potatoes (8 calories per ounce) and a great substitute for them. 
 Turnips are loaded with fiber and vitamins K, A, C, E, B1, B3, B5, B6, B2 and folate (one of the B vitamins), as well as minerals like manganese, potassium, magnesium, iron, calcium and copper. They are also a good source of phosphorus, omega-3 fatty acids and protein.The turnip or white turnip is a root vegetable commonly grown in temperate climates worldwide for its white, fleshy taproot. The word turnip is a compound of tur- as in turned/rounded on a lathe and neep, derived from Latin napus, the word for the plant.

I've had guests tell me they are the best potatoes they've EVER had. "Surprise!! That's because they aren't! They are turnips. Fooled ya!!" (I love doing that, by the way)








Above, I simply cubed them, placed on a canola sprayed parchment paper roasting sheets, added spices and some more spray - and roasted them at 425 degrees for about 25 minutes. Yumm!! Yes, I  made a lot of them.
(I like to eat, you all may have noticed)




This above one,  you are seeing my large roasting pan -  Cabbage wedges, beets, snow peas, carrots and you guessed it - turnips. On top of it is/was chicken which was all roasted together! Another YUMMM!

This guy down here? A yummy spinach mushroom fritatta with a side of home fries, I mean turnip fries. Wows em' every time (and me too!!)


They are also great in soup!

Down below I mixed it with cauliflower! Soooo good!



Here I mixed them with beets! 
The ways to enjoy them are endless!

Did I ever use a turnip before I overhauled my life 13+ years ago! Nope! Like I always say,  I didn't lose anything (well except for 165 pounds). I gained soooo much more variety, satisfaction, deliciousness, choices. I won't even get into the rewards and what I've gained from "this way" has done for me.
