Such a yummy combination. Amazing what you can come up with when you eliminate unhealthy ingredients and by ADDING in healthy ones! The very ones we are supposed to be eating and in fact were DESIGNED to eat! Everyone worries what they will be "giving up". when in fact it's what you are GAINING! Not only superior health (physically, spiritually, emotionally) but actual FOOD. Variety! Flavor! Texture! Pure Satisfaction!! The herbs, spices, citrus, mustards, wines, vinegars, non ending list of vegetable, phenomenal fruits, lean protein and all the myriad of various combinations really is ENDLESS!! I've been eating this way for 13+ years now (wow) and rarely a week goes by where I don't discover something new.

I believe I originally got this recipe from eatingwell.com, an excellent site. I tweaked it a bit. Yes, I'm a tweaker, a honer, improviser and a maximizer!
Chicken
with Apples & Leeks
- 4
chicken cutlets, 16 oz, medium-thick (I cut them into strips)
- ¼
tsp black pepper
- 1/4 tsp salt
- ½
tsp onion powder
- ½
tsp garlic powder

2 large leeks, white only, cut into julienne strips
- 2
large cloves garlic, minced
-
1 teaspoon dried rosemary
- ¼
cup cider vinegar
- 2
firm apples, peeled, cored & sliced (not too thin or they will turn into mush, yet thin enough to be soft yet firm in 10 minutes)

1 cup reduced-sodium chicken broth
1. Heat a large nonstick skillet over medium-high heat. Coat pan using about 2 tsps of Canola oil. Season chicken with salt & pepper, garlic & onion powders, add to the pan. Cook until browned, 4 to 5 minutes per side. Transfer to a plate and keep warm.
2. Reduce the heat to low. Add another tsp of oil - add leeks. Cook, stirring, until the leeks are soft, about 7 minutes. Add garlic and rosemary and cook until fragrant, about 2 minutes more. Increase the heat to medium-high, stir in vinegar and cook until most of the liquid has evaporated.
3. Add apples & broth & cook, stirring once or twice, until the apples are tender, about 4. minutes. Reduce the heat to low & return chicken & any juices to the pan. Simmer gently until the chicken is heated through.
