Back to basics. Sometimes ya just want a good ole' fashioned simple chopped salad. And today was one of those days! About a minute to cut this big beauty all nice and uniform, just the right size, using my chopper. LOVE this thing. I will post the link later. It's romaine hearts, red onion, Kirby cucumbers, plum tomatoes.  I opened up a can of Target tuna (I like their brand!), drained it and kinda broke it up right there in the can.  Combined it all, sprinkled with salt and a few splashes of balsamic vinegar. Yup, I munch on raw green beans (oh I cook with them too, lots); However, they are a great snack - raw!  Green beans are one of the few beans that CAN be eaten raw. Can be and SHOULD be. Big Beautiful Breakfast for a Big Beautiful Life!

This is a full sized dinner plate. Yet it's today's BREAKFAST! And no, I didn't eat it soon after waking up, but hours later; meaning ignore that nonsense of you must eat right away, though you really must drink,H2O. If your breakfast isn't taking up an entire dinner plate, if it's something you wouldn't dream of serving to your loved ones and guests- sorry, it's falling short of its REQUIREMENTS and your NEEDS. There is no way around this. This frittata is LOADED with protein, fiber, taste, COMPLEX carbs, healthy fat, nutrients AND weighs just under 1 and a half POUNDS. Pounds. Not under two ounces. Two measly ounces like those protein bars. Or maybe worse those concoctions that you drink that go right through you and requires no chewing or digestion (what we need). All for the same or LESS CALORIES. Drink WATER in the morning to hydrate properly. CHEW your nutrition and lots of it to energize properly. What my breakfast doesn't have? Processe...

Spectacular Spinach!

Been a long while since I've had cooked Spinach! And this is a nice way to do it. You get a nice big square, fork fulls of rich, tasty, goodness! Spinach - frozen, defrosted and squeezed out. Onions and mushrooms lightly browned, salt, pepper, egg whites - baked uncovered till set in the center. Eat your spinach! It's good, it's good for you and - your loved ones.

Grain Bowl Goodness!

Oh yeah! Another stuffed to the gills (where'd I come up with that one from?) dinner! Minutes to prepare, long time to eat, hours and hours and hours and hours of "feeling it in my stomach", nutrition that nourishes, calorie conscious, deliciously decadent. What more can one possibly expect from their food? That being said, we aren't supposed to settle for anything less! So here we go.  My pre chopped (I do a few meals worth at a time, they can also be purchased as such) 7 calories per ounce cauliflower crumbles. This particular time I cooked all of it, other times I e left it raw. Not sure how how so much goodness on so many levels can be a mere 7 calories per ounce. What I did: Broke out my huge non-stick sensational skillet. Got it hot. Drizzled in about 1 1/2 tsps (probably less) canola oil. Food . Knowledge is power and here's a WHOLE lot of really powerful words that will indeed enlighten and - empower about, well - Food.   This is information that needs to be applied every single day. Take the time to read it, internalize it and then do! Every food falls into only one of three categories and no, it’s not meat, dairy & pareve. It’s proteins, fats and carbohydrates. I’m going to focus now on carbohydrates as this is what comes up most often when discussing what should be eaten prior to fasting and is indeed the most crucial to having an easier one.
