Another opportunity to eat. Another opportunity to optimally nourish so that we may optimally flourish!  Why WOULDN'T we make the most of each precious morsel, each precious meal?!! Three times a day, each and every day.

So this was dinner last night, though I have it many times for lunch. The picture doesn't do it justice. That's right folks, I'm a food-loving foodie health coach not a food stylist 😄



It was a hot humid day here in NYC. Breakfast was a ginormo heavenly veggie frittata; lunch was a scrum-delly-ishous practically vat sized fully loaded with gorgeous great tasting goodies "salad" (I hate calling it that, just doesn't give it enough credit!!). 

Okay, back to this bowl-full of beautifulness. Dinner, it's lotsa:

sliced green cabbage
white eggplant (any color will do!) cut into strips
broccoli
zucchini

All thrown and cooked together in my HUGE non stick pan using a smidge of canola oil.

I cooked it up nicely on medium heat. 
Added in:

soy sauce
vinegar
ginger powder
garlic powder
hot sauce
Defrosted shelled edamame (What a delight to have this light protein always in the freezer!!)

Stirred it up, hence the name stir fry 😄

And then ATE it up. And then, the kitchen was unofficially closed. Couldn't even think of eating my planned snack. (Gorgeous baby red grapes).

Clearly you can add  so so much more and varied veggies, but I was sooo stuffed from breakfast and lunch, I had to actually scale it back from what I was originally going to put in there which were button and enoki mushrooms and matchstick carrots.

Food such as this, eaten CUMALITIVELY- 3 times a day, day after day, week after week month after months -  leaves you stuffed (like a thanksgiving day food fest, only you're not sick to your stomach). Your stomach is filled to capacity in a GOOD way. Something most people never experience. Because they think quick is what they need instead of EFFECTIVE. 

Eat up so that you can LIVE it up!
