Ravioli Done Right!



Ooh,  I'm loving this! Not one of my homegrown recipes, but you all know by now I get lots and lots (and lots) of great inspiration and ideas by seeing and checking out other people's creations and making them my own. And this one? Oh yeah, my mind is a spinning! 

So much to do!! For starters, I think I'd use low-fat ricotta cheese and eliminate the other ones. Maybe maybe I'd sprinkle on some parmesan cheese afterward. 

And for SURE, I'd add in cubed zucchini with the tomatoes, maybe cubed eggplant as well.  This woman needs FOOD and lots of it. We ALL need food and lots of it. I've got no time or energy for resisting temptation and trying to muster up strength and will power. No measly portions!! FILL UP THAT STOMACH!!! Mangia!! Mangia!!
