Chinese Tofu Stir Fry
Tofu. Admitting it wasn't till the past couple of years that I ventured into this arena! Yeah, just it always seemed boring bland, soft mushy and - yuck. Hello Vicki, get over yourself. It's a fabulous low calorie non meat non dairy inexpensive Protein. Give it a try. Throw those pre-conceived notions out the window. And I did! And we've been happy ever since, our relationship keeps getting stronger and stronger.
Okay. So here's my lunch. This is an enormous plate by the way. And you can't tell, but it's piled HIGH. Because, well, I need to eat and eat a lot. That's how we were designed. Three Big mama meals a day. Not 6 mini meals. Thems the worst! You're always noshy and munchy. Keep your STOMACH filled. Filled.Whoops, I digressed.
Okay, okay, here's what I did: I sliced some cabbage, bok choy, chinese eggplant (any kind will do!), zucchini. I sliced it into Julienne strips. Heated up my ginormous phenomenal non-stick pan; added about a tsp of canola oil and threw in those veggies. Stirred it a few times, and in 5 maybe 6 minutes they were yummily cooked! I added my spices: fresh ginger and garlic (I OFTEN use the powdered); soy sauce, a pea sized amount of sesame oil (the small amount is not due to the calories but the fact that it is strong and can be overpowering), a bit of hot sauce. I stirred, made a well in the middle. Earlier I had cubed up my firm tofu and sprinkled it with garlic and ginger powder and sprinkled it with some soy sauce. Put it in the well and got it hot. Then I mixed it all together. Ta-da!
This is actually smaller than usual. Feel free to generously add in string beans, broccoli, mushrooms, bell peppers, carrots. Feel free to substitute cubed chicken for the tofu; or ground turkey or chicken. Or just serve it as a veggie side dish. There are no rights or wrong. Make it your own. Just make it!
Enormous quantities of food with all the essentials - COMPLEX all day long energy supplying carbs, long-lasting FIBER, restorative and bone building (and so much more) protein; Oh and taste and flavor. You will not do this on mediorcre foods. Life SHOULD be delicious! Remember, if you wouldn't serve your meal to company, you shouldn't serve it to yourSELF! Each meal should be magnificent! THIS is how one "sticks" to their healthy lifestyle - G-d willing til 120!
The thought of noshing and picking will not cross your mind. So called temptations will become a non issue. It's cumulative. It's three large meals a day. Each day. I repeat: So called temptations will be a non issue; a thing of the past. Build a better lunch. Build a better life!
