I was blessed to attend an outdoor Barbecue phenomenal family function the other evening. Gorgeous night out! Beautiful deck, gorgeous lighting, table set for about 35. Oh and that buffet. Sooo nicely displayed! Barbecue. No fear. This was not an "ugh what am I going to eat moment"; it rarely if ever is actually, being everything is built into the "plan". But here.. ooh, hit pay dirt!

It was a perfect example of you needn't and shouldn't just smother everything in sugary sweet barbecue sauce and/or fat. Mother nature has you covered and covered the chicken too! I don't care who's concoction it is - ain't nothing going to beat this one. 



I love my spices. That I've known for a long time now. This just made me fall in love all over again!

The chief in charge shared with me what she put on those drum sticks: 

Rosemary
Thyme
Mint
Oregano
Garlic 
Onion
Salt 
Pepper


I asked, "fresh?". She said, "no, dried".  I said - "wow, it's amazing" Actually, I went on and on (as I often do ;) ) about just how great it was!

I was lucky enough to have them again the following day for lunch!

Okay, so these were barbecued on a grill. I do drumsticks all the time. They come out great simply placed on a roasting tray on 375 degrees until they are browned.  And no, they don't need oil. I cook them with the skin on, sometimes I remove the skin before I serve it, sometimes I don't. 

And wait, there was more excitable food there. Yes, excitable! I am always told I used such descriptive words for food; yup, I'm a food-loving foodie who just happens to be a health/nutrition coach & counselor. Coincidence? I. Don't. Think. So! 
The Red Cabbage Slaw. It's a staple in my home. It's so good. Stays fresh for days. So easy. So filling. Oh yeah, so healthy too (I sometimes forget that part!!).  



It's just red cabbage coarsely cut; lemon juice mostly, a hit of white vinegar, salt and a little pepper. (I was fortunate to have this too with those drumsticks the day after)

So take THAT all naysayers who say it's too hard to cook/eat healthily! Seriously, pleeeeze take that!! 

Think outside the box -  and the bottle and the jar too!
