Grain Bowl Goodness!
Oh yeah! Another stuffed to the gills (where'd I come up with that one from?) dinner!
My pre chopped (I do a few meals worth at a time, they can also be purchased as such) 7 calories per ounce cauliflower crumbles. This particular time I cooked all of it, other times I e left it raw. Not sure how how so much goodness on so many levels can be a mere 7 calories per ounce.
What I did:
Broke out my huge non-stick sensational skillet.
Got it hot. Drizzled in about 1 1/2 tsps (probably less) canola oil.
Threw in:
Chopped red cabbage
Sliced scallions
Red peppers
Chopped Zucchini
Some other possibilities?
Cubed Eggplant
Cut green beans
Slice sugar snap peas
Cut carrots
Cooked it on a medium-ish flame, till it was soft with a bit of a bite (aka not mushy)
And then.... I added in my defrosted Morning Star Farms Veggie Crumbles and the Cauliflower Crumbles.
Sprinkled in:
Lotsa cumin
Chili Powder
Onion Powder
Garlic Powder
Salt
About two tablespoons Ortega Taco Sauce - plain canned tomato sauce works too (my usual in fact) as does salsa or - no sauce at all.
Stirred it to blend and heat through.
You can use any ground poultry or beef. Cubed Chicken; cooked chicken.
This travels great and is a superior lunch as well.
You won't believe how good this is and- broken record time - how filling it is.

Minutes to prepare, long time to eat, hours and hours and hours and hours of "feeling it in my stomach", nutrition that nourishes, calorie conscious, deliciously decadent. What more can one possibly expect from their food? That being said, we aren't supposed to settle for anything less!
